Erhm,..yum! I was requested to make these bad boys by my friends for our little dinner party on Friday night, eek they are so good!
Ingredients
- 1 batch Homemade Microwave Lemon Curd (about 2 cups), chilled
- One packet of digestive biscuits
- 225g/8oz caster sugar
- 100ml/3½fl oz water
- 4 free-range eggs, whites only
- 50g of unsalted butter
Method
- Take the digestives and put them in a plastic zip & seal bag. Use a rolling pin to crush them into small pieces - not too chunky but not too fine.
- Melt the butter in the microwave and combine with the digestive biscuits. Place into mini paper cases and put into fridge to set.
- Make the Homemade Microwave Lemon Curd using the above recipe - it tastes scrummy!
- Leave the curd aside to cool and create your Italian Meringue topping
- For the Italian meringue, place the sugar and water into a pan and slowly bring to the boil until the syrup reaches 110C/230F on a sugar thermometer.
- At this stage, whisk the egg whites in the bowl of an electric mixer until firm peaks form when the whisk is removed.
- Continue heating the sugar syrup and as soon as it reaches 121C/250F remove the pan from the heat.
- Immediately resume whisking the egg whites with the beater at its lowest speed then pour in the sugar syrup in a steady stream. (CAUTION: Ensure the syrup is clear of the beaters to prevent it being splashed on your hands.)
- Continue beating for about five minutes or until the meringue is tepid
- Take your biscuit bases out of the fridge and assemble with curd and meringue topping. If you want you can turn on your grill/broiler and brown the tops!
