Healthy Banana Breakfast Muffins

These are gooooood and my new breakfast staple. A great use for old bananas and you can switch them up by adding nuts and raisins. Did I mention they are healthy too? No sugar and no butter? These are definitely the right way to start the day!

Makes 18

Ingredients:

  • 1 cup oats
  • 1 1/2 cups oats
  • 4 small bananas mashed up
  • 1 pot of organic apple sauce babyfood
  • 4 tbsp of stevia
  • 2 eggs
  • 100g walnuts
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • 1/2 tsp cinnamon
  • 50g raisins (optional)

Method:

  1. Combine bananas and eggs using a hand whisk
  2. Add apple sauce and whisk
  3. Add all other ingredients and mix by hand
  4. Divide mixture into paper cases, top with dry oats if desired and put into the oven at 180 C for 15 minutes until golden brown
