
It is my niece’s birthday party this weekend and I have been asked to make the birthday cake - she’s gonna be 2 and is such a cutie. With that being said, I wanted to make sure it was going to turn out right so I practiced the spongue for the top tier and thought I would share the recipe - it’s really simple and tastes great! I decorated the outside with some buttercream but in reality her cake will be covered in fondant & snowflakes!
Ingredients:
- 240 grams plain flour
- 240 grams castor sugar
- 3 teaspoon baking powder
- 80 grams unsalted butter, at room temperature
- 240 mL whole milk
- 2 eggs
- 1/2 teaspoon vanilla extract
- Wilton Gel Food Colouring if desired (I used teal & sky blue)
Method:
- Preheat oven to 170°C/340°F.
- Beat together flour, sugar, baking powder and butter on a low speed until the ingredients are mixed in a sandy texture.
- Gradually pour in half the milk and beat until incorporated.
- In a separate bowl, whisk together egg/s, vanilla extract and the rest of the milk briefly and then pour into the flour mixture.
- Continue mixing for a couple of minutes until the mixture is smooth.
- Weigh out and divide the mixture into 3 bowls - keep one plain and use a drop of gel colour in the other two.
- I used the Wilton Layer Pan to create my layers and divided each bowl mixture by 2 across the pans.
- Bake in pre-heated oven for about 20-25 minutes. If you’re baking all three tins, swaps the tins from tray to tray so they all cook evenly. The cake is done when light golden brown on top and a skewer comes out clean.
- Leave to cool slightly before removing from cake tin to completely cool on a wire rack.
- I assembled using an orange buttercream and voila!
